It's BBQ season again and I'm so happy and excited! In a few weeks I will take my boys (my pups Hugo & Lestat) to Fire Island for some weeks and all we do is BBQ, morning-noon and night. It hardly ever gets a chance to cool off.
This is a really easy and great BBQ chicken that I came up with last year. The store was closed and I wanted BBQ sauce but the bottle in my fridge was empty. I made one with what I had in my pantry, and it came out great!
Fast and tasty, the sauce can be used for any meat and fish and is great for shrimp as well.
5 ingredient BBQ chicken
1 small can of tomato sauce
1-2 tablespoons dark brown sugar
pinch of chili
salt and pepper
1 large organic chicken, cut into 4 pieces
1.Place tomato sauce, sugar and chili in a small saucepan and let it simmer until it starts to get really thick, about 20 minutes. (I would start with 1 tablespoon sugar and let it simmer for a while and then add more if needed)
2.Season with salt and pepper.
3.Rub all the chicken parts with salt and pepper and brush the sauce on.
4.Place on a medium grill or roast in the oven at 375F for about 40 minutes.
Brush more sauce on after half time.
Serve with a smile and more sauce on the side!
