Cauliflower and Parmesan Fritters


At least twice a week I make cauliflower mash.

Its a great no carb alternative to mashed potatoes.

Quite often I get leftovers and I have wondered what do do with it.

Today I mixed in eggs, parmesan and parsley.

Fried it in butter and served it with some roasted tomatoes.

They are very delicate and not the easiest to flip, a good spatula helps.

You can also ad some flour or even cornmeal to the mix, that will make them a bit more sturdy.

Great way to use up leftovers.


serves 4

2cups cauliflower mash

2 eggs

1/2cup grated parmesan

1/4 cupfinely chopped parsley

(1-2 tablespoons all-purpose flour or cornmeal)

butter

salt and pepper

olive oil

some toasted pine nuts

 

1.Mix mash, eggs, parmesan, parsley.(Add the flour or cornmeal if you don't care about the carbs). Mix well. 

2.Heat the butter in a pan and use one heaping tablespoon for each fritter.

3.Cook golden on one side, flip carefully and cook golden on the other side.

4.Plate and add some salt, pepper, oil and pine nuts.
