Cherry Lemon Tart


This is a truly delicious tart.

Crispy crust and a creamy almost custard like filling.

The added lemon zest gives it a little zing.

Cherry Lemon Tart

Serves 10

 

Crust:

1 stick butter, melted

1/2 cup sugar

1/2 teaspoon vanilla extract

1 cup all-purpose flour

pinch of salt

Filling:

2 cups pitted cherries

2 eggs

1/2 cup sugar

grated zest from 1 lemon

1 teaspoon vanilla extract

1 stick butter, melted

pinch of salt

2 tablespoons all-purpose flour

1/4 cup almond slivers

 

1.Start with the crust.

2.Add butter, sugar and vanilla to a kitchen mixer and mix well.

3.Add flour and salt and mix until you have a dry looking crumble.

4.Prepare a tart tin with butter or baking spray and press the dough into the tin, make sure you get it up all the edges.

5.Bake at 375F for 15 minutes, cool.

6.Fill the tart crust with cherries.

7.In a large bowl mix eggs, sugar, zest, vanilla, butter, salt and flour until smooth.

8.Pour over the cherries and top with almonds.

9.Bake at 375F for about 30 minutes, turn after 15 minutes.

10.Its done when its golden on top and set.
