Gingerbread, Orange and Pecan Pie


I went on a trip upstate with friends last weekend and in my head we where all going to bake gingerbread.

I made the dough and brought it with me, but time went just too fast, so I brought it back home.

Was trying to figure out what to do with it, I mean, its a lot, there is only so many gingerbread men I can eat.

So I turned it into a pie crust for a pecan pie.

And the result…..DIVINE!

All the spices with the pecans and some orange zest, this will be a staple in my house for all holidays to come.

Please give it a try, you will not regret it…..


Makes 1 pie

 

1/2 gingerbread dough, find here

all-purpose flour

3/4 stick salted butter

1 1/4 cup light brown sugar

3/4 cup light corn syrup

1 teaspoon vanilla extract

2 tablespoons orange juice

2 tablespoons orange zest

3 large eggs

1/2 Lb pecans

 

1.Roll out the gingerbread dough until thin and place in a well greased 9 inch pie tin, I used a square one. Remember to save some gingerbread dough for decor.

Cut off the edges.

2.Melt the butter in a saucepan and add the sugar, stir until its well incorporated.

3.Add syrup, vanilla, orange juice and zest and still well.

4.Beat the eggs in a bowl and beat in the sugar mixture.

5.Layer the pecans in the pie and top with the mixture.

6.Cut out gingerbread stars and place on top.

7.Bake at 350F for about 30-35 min.

8.Cool on a wire rack and serve.
