Potato Chip Cookies with Almonds, Ginger and Cinnamon

So I was cheating a little on my diet the other day with some salty potato chips.

I know, the horror!

Just ate a few but I had a whole bag lying around the house, and I sure don't need that.

So I decided to do that every normal person would do, I baked cookies.

I wanted to see it I could come up with a good way to incorporate potato chips in them.

And I did, together with almond flour, spices, molasses and brown sugar they came out really good.

Sweet, salty, nutty and a mix between chewy and soft.

I had 1/2 and then gave away the rest…….

If that isn't self control..I don't know!

Potato Chip Cookies with Almonds, Ginger and Cinnamon

Makes about 30 cookies

8 tablespoons soft salted butter

1 cup light brown sugar

3 tablespoons molasses

2 eggs

1/2 teaspoon cinnamon

1/2 teaspoon ginger

1/4 teaspoon cardamom

1/4 teaspoon nutmeg

1 cup all-purpose flour

1 cup crushed salted potato chips( I used Lay's)

1/2 cup almond flour

crushed potato chips 

flaky salt

1.In a food processor beat butter, sugar and molasses creamy.

2.Add the eggs one at a time, mix well.

3.Add spices, flour, potato chips and almond flour and mix it well together.

4.Place the dough in the fridge for 30 minutes.

5.Preheat oven to 370F (180C)

6.Roll the dough into walnut size balls and place on a baking tray covered with parchment paper.

7.Use a wet form and press them slightly down so they get a little flatter.

8.Sprinkle each cookie with a little crushed potato chips and salt.

9.Bake until golden, about 10 minutes.

10.Cool on a wire rack.
