Roasted Baby Kale

Have you heard there's a new kid in school?

Baby Kale is here.

I made them the first time today and it was love at first bite.

They taste like a mix of two of my favorite vegetables, kale and brussel sprouts.

I roasted mine in the oven, they turned out so amazingly.

Really a must try.

Chili Roasted Baby Kale with Goat Cheese

Serves 4


2 bags of baby kale

3 tablespoons olive oil



pinch of red chili flakes

1/2 cup crumbled goat cheese

1/4 cup toasted pumpkin seeds


1.Preheat oven to 360F.

2.Place the kale in an oven proof dish and pour over the oil, salt, pepper and chili.

3.Use your hands and massage the oil and spices into the baby kale.

4.Roast for about 15 minutes, they should be crispy on the outside and tender on the inside.

5.Place in a bowl and add goat cheese and pumpkin seeds.
