I love making tarts, sweet or savory, its all good with me.
The buttery flaky crust with a sweet tomato filling is more or less the perfect bite.
You can still get great tomatoes so no excuse not to make this tart.
Its so simple, the only work is the dough, the rest is super easy.
1 1/4 cup all-purpose flour
1/2 teaspoon fine sea salt
8 tablespoons butter, cold and cut into 1/2-inch pieces
6 to 7 tablespoons ice water
3 large tomatoes,sliced
pinch of salt and pepper
1/2 cup grated asiago cheese
1.Place flour and salt in a bowl.
2.Add the butter and work in into the flour using your hands, the result should be very crumbly.
3.Add water, a little at a time until you have a smooth dough. Don't over work it!
4.Wrap in plastic and leave in the fridge for at least one hour.
5.Preheatoven to 380F.
6.Roll out the dough on a floured surface to about 10x10.
7.Place the tomato slices in the middle and fold over the edges to create a nice free form tart.
8.Sprinkle with salt, pepper and add some fresh thyme and asiago.
9.Transfer to a baking tray and bake until golden about 40 min.
Serve warm or cold.
