Been craving tuna salad for a while now.
I always crave it once it gets really warm out.
This is a really easy recipe, just a few ingredients.
The main thing is to pick a good quality tuna, I really love the Tonnino brand, especially the one in olive oil with lemon and pepper.
Has so much flavor to it.
I always serve my tuna salad in romaine leafs.
The pink peppercorns not only looks beautiful but adds a zingy flavor to the salad.
Tuna Salad with Lemon, Eggs and Pink Pepper
Serves 2-3
2 jars tuna in olive oil, drained
3 hardboiled eggs, chopped
2 scallions, thinly sliced
2 tablespoons sour cream
1/2 cup mayo
salt and pepper to taste
pink peppercorns
1.In a bowl mix tuna, eggs, scallions, sour cream and mayo.
Use a fork to break up the tuna.
2.Season with salt and pepper.
3.Add a few pink pepper corns, mix well and serve.
