I love pizza in the mornings, especially for brunch. You can add whatever you fancy, but the EGGS are a must.

Makes 4 portions

 

You will need:

 

For the Dough:

1 cup water, lukewarm

1 tablespoon honey

1 tablespoon dry yeast

4 tablespoons olive oil

2 1/2 cups flour 

1 teaspoon salt 


 

For the Filling:

1 cup grated cheese

3 scallions, sliced

4 eggs

1/2 cup cooked crumbled bacon

12 cherry tomatoes, halved

  1. In a bowl, mix water, honey and yeast. Leave it for 5 minutes so that the yeast starts to work.
  2. Add flour, salt, and oil.
  3. Work the dough together.
  4. Cover with plastic and let it rise for 1 hour.
  5. Preheat oven to 400°F.
  6. Divide the dough into 4 pieces.
  7. Press dough into 4 oiled pans.
  8. Add cheese and half the scallions.
  9. Bake for about 5 minutes, take them out and crack an egg in the middle of each pizza.
  10. Bake again, until the egg is set. This will take around 6-7 minutes.
  11. Once done, add bacon, the rest of the scallions, and tomatoes.

TIP:

Water that is too hot could kill the yeast, so make sure your water is lukewarm.
