Sweet corn is one of my favorite vegetables. Pairing it with herbaceous basil and sweet shallots makes it practically perfect!

Serves 4

You will need:
2 ears of corn
2 shallots, thinly sliced
2 cups chicken stock
2 tablespoons butter
salt & pepper, to taste
fresh basil
  1. Preaheat oven to 375F.
  2. Cut the corn into 1-inch slices.
  3. Place in a ovenproof dish and top with shallots, stock, butter, salt, and pepper.
  4. Cover with foil and let bake in the oven for 20 minutes.
  5. Serve with fresh basil.
