- Buy 7-8 baby artichokes and cut them as thinly as you can. A mandolin is a great tool for this.
- Place them in ice cold water with a couple of lemon slices in it.
- Heat vegetable oil in a pan and deep fry the artichokes in batches.
- Remember to pat them dry first with some paper.
- Sprinkle with flaky sea salt and serve with aioli.
