These taste best when eaten directly out of the pan.
½ head cauliflower, thinly sliced
4 scallions, thinly sliced
¼ cup grated Parmesan
2 tablespoons flour
pinch of baking powder
salt & pepper, to taste
vegetable oil, for frying
tomato salsa, for serving
- Place cauliflower, scallions, Parmesan, flour, and baking powder in a large bowl.
- Mix well and season with salt and pepper.
- Heat up ½” of vegetable oil in a pan and fry tablespoon-sized batches of the mixture. Fry them about 2 minutes on each side, or until golden.
- Drain by placing fritters on a plate covered in paper towel.
- Serve warm with salsa.
