This is a great low-fat and low-calorie dish. It’s a great substitute for mashed potatoes.

Serves 4

1 large cauliflower head, in pieces

¼ cup warm vegetable broth

salt & pepper, to taste

glug of olive oil

chives, chopped

  1. Place the cauliflower in a large pot and steam it until very soft.
  2. Place in a blender and add broth.
  3. Process until smooth and season with salt and pepper.
  4. Place in a bowl and drizzle with some olive oil and chives.
