This fast and easy no-cook meal is awesome on its own as a lunch or as a side for dinner. The secret is using the feta cheese brine, which adds flavor to the dressing.
2 15-ounce cans chickpeas, drained
1 cup red, yellow, and orange bell peppers, finely cubed
1/2 cup crumbled feta cheese in brine
2 scallions, finely sliced
2 handfuls of baby spinach
2 tablespoons olive oil
3 tablespoons feta brine
pinch of red chili flakes
- Drain and rinse the chickpeas, and place them in a large bowl.
- Add peppers, feta, scallions, and spinach to the chickpeas.
- Drizzle with olive oil and feta brine. Mix well.
- Add salt and chili flakes to taste. Serve.
