This fast and easy no-cook meal is awesome on its own as a lunch or as a side for dinner. The secret is using the feta cheese brine, which adds flavor to the dressing.

SERVES 4

You will need:
2 15-ounce cans chickpeas, drained
1 cup red, yellow, and orange bell peppers, finely cubed
1/2 cup crumbled feta cheese in brine
2 scallions, finely sliced
2 handfuls of baby spinach
2 tablespoons olive oil
3 tablespoons feta brine
salt
pinch of red chili flakes
  1. Drain and rinse the chickpeas, and place them in a large bowl.
  2. Add peppers, feta, scallions, and spinach to the chickpeas.
  3. Drizzle with olive oil and feta brine. Mix well.
  4. Add salt and chili flakes to taste. Serve.
