It's sort of a cake/souffle/pudding. There can be no secret that I'm a big chocolate lover, and chocolate cakes are my favorites. Always looking for new ways to make a great cake.

Serves 4

 

2 teaspoons butter

1/2 cup sugar

6 large eggs, separated

6 ounces good quality chocolate, melted

1/2 teaspoon salt
Creme fraiche, for serving

Raspberries for serving

 

  1. Preheat oven to 350F. Bring a pot of water to the boil. Butter 4 ovenproof small dishes.
  2. In a large bowl, whisk egg yolks with sugar until light and creamy.
  3. Whisk in the melted chocolate.
  4. In another bowl, whisk egg whites with salt to soft peaks.
  5. Fold the egg whites gently into the chocolate mixture using a spatula.
  6. Pour into the dishes. Set the dishes in a roasting pan and pour enough boiling water into pan to come 1 inch up sides of dishes.
  7. Bake about 12-15 minutes, cake should have just set.
  8. Cool and serve with creme fraiche and raspberries.

TIP:

My big tip for making a tasty chocolate cake is to use good quality chocolate. You will taste the difference. I promise. Enjoy!
