6 ounces greek yogurt
3 tablespoons rice vinegar
pinch of sugar
1/4 teaspoon celery seeds
2 tablespoons chopped dill
salt and pepper
4 small Persian cucumbers or
1 large cucumber
1/2 red onion, finely chopped
- In a bowl mix together yogurt, vinegar, sugar, celery seeds, dill, salt, and pepper.
- Cut the cucumbers in half and, with a spoon, scrape out the seeds.
- Cut cucumber halves into 1/4-inch slices.
- Mix cucumber slices into the dressing with red onion and serve.
