Eggs cooked in rich cream... heaven! Can't be much easier than this—real, one pot cooking wonder.
Serves 4
You will need:
Butter, for coating
4 eggs
8 tablespoons heavy cream
16 baby spinach leaves
4 tablespoons crumbled fried bacon
1 spring onion, thinly sliced
Salt and pepper, to taste

- Preheat oven to 350F.
- Butter 4 small ramekins.
- Break an egg in each and add cream, spinach leaves, bacon, onion, salt and pepper.
- Bake for about 10 to 12 minutes.
- Serve hot with toast.
