Serves 4

Butter, for coating
4 eggs
8 tablespoons heavy cream
16 baby spinach leaves
4 tablespoons crumbled fried bacon
1 spring onion, thinly sliced
Salt and pepper, to taste

  1. Preheat oven to 350F.
  2. Butter 4 small ramekins.
  3. Break an egg in each and add cream, spinach leaves, bacon, onion, salt and pepper.
  4. Bake for about 10 to 12 minutes.
  5. Serve hot with toast.
