Cumin really gets the sweetness out of the cauliflower, and when you add the garlic and sultanas… wow.
Serves 4
1 cauliflower head, in pieces
1 head of garlic, peeled
1 cup sultanas (or raisins)
1 teaspoon cumin seeds
salt & pepper, to taste
glug of olive oil
- Preheat oven to 375F.
- Place the cauliflower, garlic, and sultanas in a large roasting rack and drizzle with olive oil.
- Sprinkle with cumin, salt, and pepper.
- Roast until the cauliflower is al dente and golden.
- Serve warm as a salad or a side dish to chicken or white fish.
