Serves 4

1 cauliflower head, in pieces

1 head of garlic, peeled

1 cup sultanas (or raisins)

1 teaspoon cumin seeds

salt & pepper, to taste

glug of olive oil

  1. Preheat oven to 375F.
  2. Place the cauliflower, garlic, and sultanas in a large roasting rack and drizzle with olive oil.
  3. Sprinkle with cumin, salt, and pepper.
  4. Roast until the cauliflower is al dente and golden.
  5. Serve warm as a salad or a side dish to chicken or white fish.
