This looks beautiful but tastes even better.

The ricotta soaks up the floral olive oil. All you need to do is to put it straight on the table with crusty bread and serve some wine. Supper in a moment.
You will need:
fresh ricotta
good olive oil
sprig of fresh mint
sprig of fresh thyme
2 teaspoons peppercorns
zest of 1 lemon
- Roll the ricotta into small balls and place in a ceramic dish or glass jar.
- Add some sprigs of mint and thyme.
- Sprinkle with peppercorns and lemon zest and pour enough oil over to cover the cheese balls.
- Store in the fridge.
