A classic French bistro salad with green beans, radishes, herbs, and a mustard dressing! My mom’s favorite salad (or maybe just the dressing), the stars are the green beans and eggs, otherwise use any vegetables you like.
8 ounce green beans, trimmed
10 radishes, cut in half
4 hard boiled eggs, peeled and halved
1/4 cup olive oil
1 tablespoon dijon mustard
juice from 1/2 lemon
1 tablespoon chopped dill
1 tablespoon chopped chives
salt and pepper
- Blanch the green beans by boiling for 30 seconds in water. Drain and immediately submerge in an ice water bath to cool.
- On a platter arrange beans, radishes, and eggs. Top with dill and chives.
- In a bowl mix oil, lemon juice, mustard, herbs, salt, and pepper. Mix well and serve with the salad.
