This is sort of a mix between pickles and a salad. In Norway, we always serve this salad with fish.

Serves 6

You will need:
1 large English cucumber
1 small red onion, in thin rings
1/2 cup rice vinegar
1 tablespoon sugar
2 tablespoons dill, finely chopped

  1. Thinly slice the cucumber and place in a serving bowl with the red onion.
  2. In a bowl mix vinegar and sugar and stir in the dill.
  3. Pour the liquid over the cucumber, stir, and let it sit 30 minutes before serving.

TIP:

Can be made 4 hours before, just keep it in the fridge until serving.  Goes great with anything salty.
