This is the loveliest of cocktails! The soda gives it some sparkle without the added zip of tonic. I don't know about you, but I just adore the combination of grapefruit and elderberry too!


Juniper berries are wonderful. I buy them a kilo at a time on Amazon and keep them in the freezer!

Serves 2

You will need:
1/2 pink grapefruit
6 to 8 ice cubes
2 teaspoons gin
11⁄4 teaspoons lemon juice
3/4 teaspoon elderflower syrup
soda water
6 juniper berries
2 sprigs of rosemary
  1. Place the glasses in the freezer a half an hour before serving.
  2. Squeeze the grapefruit half, and put juice in a shaker with ice cubes, gin, lemon juice, and elderflower syrup. Close tightly and shake well.
  3. Pour into two glasses, and top with soda water. Decorate with juniper berries and sprigs of rosemary.
