Makes about 22 cookies

You will need:
1/2 cup salted butter, softened
1/2 sugar
1 large egg
2 tablespoons milk
grated zest from 1/2 organic lemon
pinch of salt
1 teaspoon ground ginger
2 cups all-purpose flour
1/2 teaspoon baking powder

1/4 cup sugar
1 teaspoon ground ginger

  1. Preheat oven to 350F.
  2. In a bowl cream butter and sugar until light and fluffy. Add the egg and mix well. Stir in milk, lemon zest, salt and ginger. Add flour and baking powder and mix until fully incorporated.
  3. Roll the dough into walnut size balls and place on a parchment-lined baking sheet. Use the back of a fork and press down to flatten each cookie a little. It makes such a cute design!
  4. In a small bowl mix sugar and ginger. Sprinkle a little sugar over every cookie and bake for about 8-10 minutes or until they just start to get a little golden on the sides, don't over bake. As soon as the cookies come out sprinkle a little more sugar over each cookie. Cool on a wire rack and serve.
