Not only do they taste good but the smell alone will put you in a cheery mood.

Serves 4


2 eggs
2 tablespoons maple syrup
2 tablespoons butter, melted
1 cup milk
1 1/2 cups all purpose flour
3 teaspoon baking powder
¾ teaspoon cinnamon
½ teaspoon ginger
¼ cup light brown sugar
butter, for frying

1/4 cup water (only if batter seems too thick!)


  1. In a large bowl mix eggs, maple syrup, butter, milk, and water.
  2. Mix in flour, baking powder, spices, and sugar.
  3. Heat the butter and make pancakes, 1½ tablespoons at a time.
  4. Serve warm with maple syrup.
