This is such a great lunch or brunch dish. It's quick to make, very tasty and might I say... hold for it, quite healthy! Try it out and see.

Serves 4

7 oz green beans, trimmed
salt
mustard leafs
2 tablespoons white vine vinegar
4 large eggs
1/2 cup shaved parmesan
4 tablespoons olive oil
pepper

  1. Bring a large pot of salted water to a boil.
  2. Add the beans and boil them for 30 sec.
  3. Put them straight over in a bowl filled with ice water.
  4. Dry them and place on plates.
  5. Now in the same pot ad the vinegar.
  6. The water should be just bellow the boiling point.
  7. Crack the eggs one at a time into a cup and drop the egg gently into the water.
  8. Let them simmer 3 minutes. Remove slowly with a slotted spoon.
  9. Put on top of the beans and add parmesan.
  10. Drizzle with some olive oil and season with salt and pepper.
