I just love the deep sweetness these veggies get from the honey and the roasting!
Serves 4
3 red beets, peeled and cut in half
3 golden beets, peeled and cut in half
3 turnips, peeled and cut in half
8 carrots, peeled
1 whole head of garlic, just cut off the top
5 tablespoon olive oil
2 tablespoon honey
fresh thyme
salt & pepper to taste
- Preheat oven to 350F.
- Place all the vegetables in an oven-proof dish and drizzle with olive oil and honey.
- Sprinkle with thyme and salt and pepper.
- Bake until tender.
