Serves 4

8 small carrots, peeled and cut in half lengthwise

8 beets, peeled

2 celery roots, peeled and cut in 4 lengthwise

3 tablespoons olive oil

3 tablespoons honey

salt & pepper, to taste

3⁄4 cup crumbled goat cheese


  1. Preheat oven to 375°F.
  2. Place the carrots, beets, and celery in an ovenproof dish and drizzle with olive oil and honey.
  3. Sprinkle with a little salt and pepper.
  4. Bake until soft, about 20 to 30 minutes.
  5. Quarter the beets.
  6. Place the greens in a large bowl and add cheese and grilled vegetables.
