This is a wonderful Autumn side dish!
Serves 4
8 small carrots, peeled and cut in half lengthwise
8 beets, peeled
2 celery roots, peeled and cut in 4 lengthwise
3 tablespoons olive oil
3 tablespoons honey
salt & pepper, to taste
3⁄4 cup crumbled goat cheese
greens
- Preheat oven to 375°F.
- Place the carrots, beets, and celery in an ovenproof dish and drizzle with olive oil and honey.
- Sprinkle with a little salt and pepper.
- Bake until soft, about 20 to 30 minutes.
- Quarter the beets.
- Place the greens in a large bowl and add cheese and grilled vegetables.
