This Monday I'm giving you something that is like life itself, a little sweet and a little sour. A lime pie. I love the sour and sweet taste of this pie, it's kinda an explosion in your mouth. And if you serve it a la mode or with a dash of creme fraiche, it's even better.

Serves 8

Crust:
1 1/4 cups plain flour
1 tablespoon sugar
1 stick cold butter cut into pieces
2 tablespoons ice cold water


1. Preheat oven to 325 degrees F. 2. In a medium-sized bowl, mix flour and sugar; slowly work butter into the flour to create a grainy-like mixture. 3. Add water and continue kneading the dough to mix. 4. Wrap in plastic and refrigerate for at least 1 hour. 5. Roll out on a floured surface and place in a buttered pie tin. 6. Bake for 10 minutes. 7. Let cool.


Filling:
1 can sweetened condensed milk
4 egg yolks
1/2 cup lime juice
1 tablespoon rind

  1. Mix together condensed milk, egg yolks, lime juice and rind.
  2. Pour into the pie crust and bake for another 15 minutes or until set.
  3. Cool and serve.
