This salsa is amazing, so fresh tasting. It goes perfect with salmon (pictured) and chicken.
This recipe is from my Fall 2015 issue!
You will need:
1 ripe mango, peeled and diced
1⁄2 small red onion, finely chopped
1⁄2 red chile pepper, finely chopped
2 tablespoons cilantro, chopped
1⁄2 cup cranberries, fresh or frozen
1⁄2 lime, just the juice
4 tablespoon Greek yogurt
4 tablespoons mayonnaise
1 garlic clove, minced
1 teaspoon lime juice
salt and pepper, to taste
4 large whole wheat tortillas
- Start with the mango salsa. In a bowl, mix mango, red onion, chili, cilantro, cranberries, and lime juice.
- In a small bowl, mix yogurt, mayo, garlic, and lime. Season with salt and pepper.
- Grill the tortilla and top with mango salsa and sauce. Add grilled salmon or chicken.
