I was never the biggest mexican food fan. Growing up in Norway the only mexican I remember was some Taco kits that didn't really taste much. But of course moving to New York I quickly understood that mexican food is more then Taco kits. It can be very elegant and simple, clean tastes and well prepared. I even started cooking some mexican at home. One of my favorites is this cold crab soup. It's so flavorful and really easy to make. I'm really in the mood for something spicy today, so I'm off to the market to get the ingredients for this soup. Enjoy.
Serves 4

1 cup tomato juice
3/4 cup clam juice
3 tablespoons lime juice
1 teaspoon Tabasco
salt
1 small yellow onion, finely chopped
14 oz fresh crab meat
8 cooked and cleaned shrimps
12 cherry tomatoes, cut in half
1 avocado, in pieces
red chili flakes

  1. In a large bowl mix together tomato juice, clam juice, lime juice and Tabasco.
  2. Season with salt.
  3. Add onion, crab meat, shrimps, tomato and avocado.
  4. Chill and serve with a sprinkling of red chili flakes.

TIP:

You can make it a day in advance.
