This is the PERFECT soup to keep the cold away!
1 pack of rice noodles, soaked like it says on the package
2 cups baby spinach
1 cup sprouts
1 red chili, thinly sliced
4 eggs, hardboiled, peeled and cut in half
6 cups boiling chicken stock
chili sauce (sriracha)
- n 4 bowls add cooked noodles, spinach, sprouts, chili and egg.
- Pour over the boiling broth.
- Add chili sauce, as much as you want.
- Serve with some fresh mint.
You can make this soup more hearty by simply adding a protien like chicken, shrimp or beef.
