French:

1/2 teaspoon finely chopped shallots
1/2 teaspoon lemon juice
pinch of pepper
Nordic:
1/2 teaspoon finely chopped apple
1/2 teaspoon finely chopped shallots
1/2 teaspoon apple cider vinegar
