The flavor in this pasta dish will surprise you. The sourness of the lemon is the perfect accompaniment for the salty Parmesan.

Serves 4

1/2 cup olive oil

Juice from 1 lemon

3 tablespoons capers

5 tablespoons grated Parmesan cheese

1 tablespoon chopped thyme

Grated zest from 1 lemon

1 pound pasta, any kind

Salt, to taste

  1. Mix together oil, lemon juice, capers, Parmesan, thyme and lemon zest in a large bowl.
  2. Cook pasta al dente in salted water. Drain and add to the bowl.
  3. Toss well and serve.
