Sometimes a dish gets born just out of what you have left in your fridge. A while ago I had some friends over for dinner. One of them forgot to tell me that she didn't eat meat. And I had made like a meat bonanza. I mean it was meat on meat. So i looked in my fridge and came up with a pear and goat cheese salad with mustard vinaigrette. It turned out really nice, she was happy. And I have made it two times after that. It's really good.
2 pears, sliced
1 cup crumbled goat cheese
6 tablespoons olive oil
1 teaspoon honey
1 tablespoon mustard
- Place the greens on plates and add pear slices and goat cheese.
- Sprinkle with salt and pepper.
- Whisk together oil, honey and mustard and pour over the salad and serve.
