I'm totally addicted to these pineapple paletas Mexican frozen fruit pops these days. They are really easy to make and I can hardly wait for the to freeze up so I can eat them. You can play with the recipe and add spices like chili or ginger, but I like mine clean.

Makes 4-6

You will need:
4 cups finely chopped pineapple
3/4 cups sugar
3/4 cup water
2 tablespoons lime juice
  1. Bring a small pot of sugar and water to the boil, stir until the sugar is dissolved, cool.
  2. Place the syrup and half the pineapple in a blender and whizz until smooth.
  3. Push through a fine strainer.
  4. Mix with the rest of the pineapple and lime juice.
  5. Place the wooden sticks in the molds and pour in the mixture.
  6. Freeze until solid.
  7. Should be used within 1 week.
