I love this slaw served with some spicy jerk chicken, but it’s also great on its own.



SERVES 4

2 carrots, peeled, very thinly sliced
1 tart apple, thinly sliced
1 squash, thinly sliced
4 fresh pineapple rings, diced
microgreens

DRESSING
4 tablespoons Greek yogurt
1 teaspoon dijon mustard
pinch of sugar
salt (try pink salt!)


  1. Mix all the salad ingredients in a large bowl.
  2. In a small bowl, mix yogurt, mustard, sugar, and salt.
  3. Combine slaw and dressing, and serve.

TIP:

Serve the dressing on the side so your guests can decide how much to use.
