The holidays are over and I must say that I'm so ready to get back to work. It's still winter outside and this winter as every other winter I crave one thing more then anything. Honey. I think it must be from my childhood when my grandmother gave me hot milk with honey. She always did that at wintertime to keep the flue and cold away. And it kinda works, knock on wood. No flu or cold yet this winter. A great way to use honey is this pizza. I just love the mix of the sour chevre and the sweet honey. And try to add some honey to your pizza dough, it turns out crispy and golden.

1 cup lunk warm water
1 tablespoon honey
1 tablespoon dry yeast
2,5 cups flour
1 teaspoon salt
4 tablespoon olive oil

Filling:
10 grape tomatoes, halved
1/2 cup crumbled chevre
10 basil leafs
honey to drizzle

  1. Start with the dough.
  2. In a bowl mix water, honey and yeast.
  3. Leave it for 5 minutes so that the yeast starts to work.
  4. Add flour, salt and oil.
  5. Work the dough well together.
  6. Cover with plastic and let it rise for 1 hour.
  7. On a baking tray press the dough out with your fingers to form a large pizza.
  8. Add tomatoes and half of the chevre.
  9. Bake at 450F, 250C for about 5-6 minutes, or until golden and crisp.
  10. Take it out and add the rest of the chevre, basil and drizzle with honey.
  11. Enjoy!
