My take on the classic stuffing is easy, healthy, and so delicious.

SERVES 4

You will need:
1 tablespoon olive oil
1 tablespoon butter
1 small onion, finely chopped
2 tablespoons pine nuts
1⁄3 cup whole almonds 8 sage leaves
3 cups quinoa, cooked
salt and pepper
1/2 cup cranberries, fresh or frozen
  1. Heat oil and butter in a large sauté pan.
  2. Sauté onion until soft.
  3. Add nuts and sage, and cook until the pine nuts become golden brown.
  4. Stir in the quinoa, and season with salt and pepper.
  5. Add cranberries and stir until everything is warm.
