This raw salad highlights one of my FAVORITE ingredients, kale! Also, radicchio, beets, and a sherry vinaigrette!

1 small bunch of kale, wash and remove the stems
1/2 head of radicchio
2 red beets, peeled and cut very thin
2 golden beets, peeled and cut very thin
6 small carrots, cut into strips
1/2 cup toasted pecans
1/4 cup toasted pumpkin seeds
4 tablespoons olive oil
2 tablespoons sherry vinegar
salt and pepper
- Place the kale in a large bowl and gently give it a little massage, this will break up the fibers and makes it easier to eat.
- Mix oil, vinegar, salt & pepper and set aside.
- Add remaining ingredients to your kale.
- Top with vinaigrette and toss well.
Always massage your kale leaves and be sure to cut out the tough stems.
