You can use whatever fruit you like in this salad.  The sweet gingery maple syrup-like dressing makes it come together into the most refreshing and sumptuous of desserts. Enjoy as-is or serve with yogurt, whipped cream, or a scoop of vanilla ice cream.

SERVES 2

You will need:
4 cups mixed berries, like strawberries, raspberries, blackberries, currants
4 tablespoons maple syrup
1/2 teaspoon fresh ginger, grated
fresh mint leaves for decoration
  1. Halve or quarter the berries. Arrange everything together in a serving bowl.
  2. Mix maple syrup with ginger, and pour over the fruit.
  3. Garnish with fresh mint.
  4. Enjoy as-is or serve with yogurt, whipped cream, or a scoop of vanilla ice cream.
