A quick roast in the oven brings even more flavor out of summer apricots!

Serves 4

You will need:

 

6 firm apricots, cut in half

2 tablespoons olive oil

1 bunch arugula

1 cup fresh snow pees

1 small red onion, thinly sliced

12 thin slices of prosciutto

1 cup crumbled goat cheese

3 tablespoons olive oil

2 tablespoons sherry vinegar

salt and pepper

  1. Preheat oven to 400F.
  2. Place the apricots on a baking tray and drizzle with olive oil.
  3. Bake until they start to darken, about 4-5 minutes.
  4. In a large serving bowl mix arugula, snow peas, prosciutto, goat cheese and apricots.
  5. Drizzle with oil and sherry vinegar. Season with salt and pepper and serve.
