A rich and earthy beet dip that will be the hit of your next party!
6 large roasted and peeled beets, cold (you can totally use store bought)
2 tablespoons Justin's Classic Almond Butter
2-3 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon grated lemon zest
1 tablespoon fresh parsley leafs
salt and pepper
micro greens, for serving
- Place all ingredients except micro greens in a food processor and blend until you have a smooth dip.
- If its to thick you can just add a little more olive oil or lemon juice.
- Spoon into a bowl and garnish with micro greens.
- Serve with pita chips.
