The wonderful dressing makes these roasted fruits and vegetables sing!
SERVES 4
You will need:
2 large parsnips
2 firm pears
2 tablespoons olive oil
salt and pepper
crushed red peppercorns
DRESSING:
1 cup mixed herbs like parsley, dill, etc.
1/2 cup olive oil
2 tablespoons rice vinegar
salt and pepper

- Preheat oven to 425F.
- Scrub and cut the parsnips and pears into wedges.
- Toss with olive oil, salt, and pepper, and place on a roasting rack.
- Roast until golden, about 20 minutes.
- Place on a serving dish, top with a drizzle of olive oil and some crushed red peppercorns.
- For the dressing: Place herbs, oil, vinegar, salt, and pepper in a blender and blend until smooth.
- Drizzle dressing over roasted parsnips and pears to serve.
