Spice up Winter tomatoes by roasting them for this wonderful salad!

Roasted tomato salad
Serves 4
1 lb of mixed tomatoes, whole cherry and larger ones cut on half
olive oil
salt and pepper
olives
fresh basil
crumbled goat cheese
- Preheat oven to 375F (190C)
- Place the tomatoes in an oven proof dish and drizzle with oil and sprinkle with salt and pepper
- Roast in the oven until you see them start cracking, about 5 minutes
- Divide on plates and add olives, basil and goat cheese
- Drizzle with olive oil and enjoy (tastes like summer!)
