Roasted tomato salad

Serves 4

1 lb of mixed tomatoes, whole cherry and larger ones cut on half

olive oil

salt and pepper


fresh basil

crumbled goat cheese

  1. Preheat oven to 375F (190C)
  2. Place the tomatoes in an oven proof dish and drizzle with oil and sprinkle with salt and pepper
  3. Roast in the oven until you see them start cracking, about 5 minutes
  4. Divide on plates and add olives, basil and goat cheese
  5. Drizzle with olive oil and enjoy (tastes like summer!)
