I love to serve classic Scandinavian skagen salad on tortillas!

10 ounces peeled and cleaned shrimp
2 small Moroccan cucumbers, finely cubed
1/2 small red onion, finely chopped
2 tablespoons fresh dill, finely chopped
3 tablespoons mayonnaise
1 tablespoon sour cream
2 tablespoons lemon juice
salt and pepper
1 4-ounce jar of salmon roe
- Cut the shrimp into small pieces and place in a mixing bowl.
- Add cucumbers, onion, dill, mayo, sour cream, and lemon juice. Mix well.
- Season with salt and pepper.
- Let sit in fridge for 1 hour before serving. Serve on a tortilla with dill, lettuce, and some salmon roe.
