Simple spiced grilled fruit is such a wonderful finish to any meal. We make ours extra special with homemade caramel and a honey drizzle.


Caramel Note: Always start with a clean pan and utensils, as any dirt or debris can cause crystals to form.

SERVES 4 TO 6 PEOPLE

FOR THE CARAMEL:
1 cup granulated sugar
2 tablespoons water
1 drop lemon juice

FOR THE GRILLED FRUIT:
3 pears, washed and sliced lengthwise
3 large plums, washed, pitted, and sliced lengthwise
1⁄2 cup honey
1/4 cup maple sugar
1/4 cup salted butter, melted
1/4 teaspoon fresh pepper
1⁄8 teaspoon nutmeg
1/4 teaspoon cinnamon

  1. For the caramel: Line a 9-inch by 13-inch sheet pan with parchment paper before you begin.
  2. In a heavy-bottomed, high-sided saucepan over low to medium-low heat, combine 1 cup sugar, water, and a drop of lemon juice. I find that by maintaining a low heat on the stove, I have more control over the caramelizing process, as it is really easy to burn.
  3. Cook, stirring constantly with a wooden spoon or silicone spatula, until sugar dissolves and mixture just begins to simmer. Sugar melts at about 320°F and will turn to a clear liquid at that temperature.
  4. After sugar dissolves and syrup is simmering, cook for approximately 8 to 10 minutes, without stirring.
  5. Holding the handle of the pan, gently tilt it off the heat to distribute color evenly as sugar caramelizes. Boiling times will vary according to different stove tops and other factors.
  6. If using a digital thermometer, the final temperature should register between 340°F and 350°F, and the syrup should have a golden brown/ light amber color. Watch the changing of the color and the temperature carefully as it can go past the light brown stage quickly and burn.
  7. When you think it is close to being done, remove from heat and pour the caramel into fun patterns onto your parchment-covered sheet pan.
  8. Set aside the caramel shapes to cool.
  9. For grilled fruit: Preheat gas grill to 350°F.
  10. In a large mixing bowl, mix together honey, maple sugar, melted butter, pepper, nutmeg, and cinnamon.
  11. Add pear and plum slices to the mixture, and toss to coat the fruit.
  12. Arrange fruit slices on the top rack of the hot grill, and cook until they begin to caramelize. Turn with tongs and repeat. Fruit should be a bit al dente, but still golden.
  13. Place cooked fruit on a platter, drizzle with honey, and decorate with cooled caramel shapes.
  14. Top with whipped cream and serve.
