When you roast garlic it becomes much milder and very sweet, so the sauce has the sweet taste of garlic with a kick from the chili.
8-10 cloves of garlic
1 tablespoon olive oil
pinch of red chili flakes, or as much as you want
1/3 cup olive oil
1 pound cooked pasta, I used whole wheat spaghetti
- Place the garlic in a small oven proof dish and toss with the oil.
- Roast in oven at 400F, 200C for until golden.
- Place garlic in a blender with chili and oil and whizz until a smooth oil, season with salt.
- Place the warm pasta in a large bowl, add oil and parsley, mix gently and serve.
