When I was a kid my grandmother made a strawberry and coconut cake. It was so good. The recipe is gone, but I have tried to make my own version of this cake. It's really good.And the mix of strawberry and coconut has always been a favorite of mine. Enjoy!

Makes two small cakes
Serves 8
100 g butter, melted
1/3 cup sugar
1 cup plain flour
1/2 teaspoon baking powder
1/2 cup full fat coconut milk
1/4 cup milk
Topping:
1/2 cup strawberry jam
1 egg white
2 tablespoons sugar
1 cup flaked coconut
- Preheat oven to 180C, 350F.
- Mix together butter, sugar, flour, baking powder, coconut milk and milk in a baking bowl.
- Divide the mixture between two greased small loaf pans.
- Bake for about 20 minutes, or until set and golden.
- Cool.
- Spread jam over the cakes.
- Mix together egg white, sugar and coconut.
- Top the cakes with the mixture and bake further for about 5-6 minutes, or until the coconut gets golden.
- Cool and remove from the tin before serving
